I am very happy to share this recipe of black rice salad, carrots, feta & beans to die for and especially SUPER healthy and greedy… It’s rare to eat black rice, and yet it’s so healthy.

Ingredients

For 2 people
  • 120g of black rice
  • Half a square of feta
  • 3 carrots
  • Some beans
  • Olive oil, salt and pepper
  • 1 shallot

Preparation

STEP 1: For this recipe, start cooking your black rice in water for 40 to 45 minutes.

STEP 2: While waiting for cooking, cut your carrots into thin strips and bake in the oven for about twenty minutes with olive oil, salt and pepper.

STEP 3: Cut your shallot finely, as well as your feta, then set aside.

STEP 4: Cook your beans in boiling water for 3/4 min then remove the skin to recover only the heart of the bean.

Dressing: In a round and hollow plate, start by putting your black rice, then your baked carrots on top, your feta, and your beans. Simply season with olive oil (for more taste, you can put some sesame oil, and pine nuts). Salt, pepper and enjoy this great black rice salad, carrots, feta & beans.
