I had the chance to travel for 3 months in South America, and I traveled Argentina for 1 month in a van! It was great. One day, we met an Argentinian with whom we cooked gluten-free empanadas in a campsite, it was really great experience! So we wanted to share with you the recipe we used.
It’s really not complicated and delicious.

Ingredients

For 4 person(s)
  • 40g of your favorite gluten-free bread flour mix (and more if needed)
  • 3 tablespoons vegetable fat
  • 1/2 teaspoon salt
  • 180 ml hot water
  • 2 teaspoons baking powder
  • 1 egg, lightly beaten
  • 1 packet of yeast (delivered with bread mix)
  • 3 tablespoons sugar
  • Parchment paper

Preparation

STEP 1: In a small bowl, combine hot water, sugar and yeast and let stand for 10 minutes.

STEP 2: Then mix all the dry ingredients in a large bowl. Mix the vegetable fat with your fingers, until the mixture looks like small crumbs. Add the egg with the water mixture, and add to the dry ingredients, stirring until well incorporated.

STEP 3: The dough will be sticky. Use the rest of the flour mixture to knead the dough until it is even and no longer sticks to your fingers. Form the dough into a cylinder with a diameter of about 12 cm.

STEP 4: Cover the bowl and leave in a warm place for about 1 hour. Cut the cylinder into 3cm thick slices and unroll each slice on a separate piece of parchment paper until it is thin enough.

STEP 5: Leave each slice on its parchment paper, stack them together and close them in a freezer bag. Refrigerate or freeze until ready to stuff.


For the stuffing:

Fill them with spicy meat, chicken, turkey or your favorite cheese. Simply place a tablespoon of stuffing near the center, and fold it, squeezing it with a fork or your index finger.

The simplest would be to bake them, basting them with a mixture of organic eggs (an egg and a little water, whipped together), and cook them on a baking sheet greased at 200 degrees for 10-15 minutes, or until golden brown.

For dessert, fill them with sliced apples and sprinkled with sugar and cinnamon. Once they are cooked, sprinkle them with powdered sugar and you will get a mini apple pie!
