To go to the UK, you need to know the recipe for the famous gluten-free fish&chips, right? So, to avoid that it is a little too fat through the fryer, here is a simple recipe and super good to make in the oven.

Ingredients

For 2 people
  • 400 grams of potatoes
  • 2 separate egg whites
  • 2 g paprika
  • 2 g salt
  • 8 ml rapeseed oil
  • parchment paper
  • 300 g of cod fillet or other white fish of your choice (ask your fishmonger for cooking information)
  • 65 ml partially skimmed milk
  • 30 g cornstarch (Maizena)
  • 30 g flour / cornmeal (polenta)
  • 1 g cayenne pepper
  • vegetable oil aerosol
  • 1/4 cup tartar sauce

Preparation

STEP 1: Preheat the oven to 260°C/500°F. Place parchment paper on a baking sheet and lightly oil.

STEP 2: Put the potatoes with the skin in boiling water.

STEP 3: Oven Fries:
When the potatoes are cooked, cut them in half lengthwise, then cut each half into 4-6 equal-sized wedges for equal cooking time.

STEP 4: in a deep plate, beat the egg white with 2 g of paprika and salt. Add the potato wedges and coat well with this mixture. Arrange the quarters on the baking sheet in a single layer, without packing them, because we want them to roast and not to be steamed.

STEP 5: Place the baking sheet in the lower part of the oven. Cook 15 min, then turn the potatoes once, then continue cooking for another 15 min

STEP 6: For fish:
Cut the fish into portions. Prepare 2 soup plates: put the egg white and milk on the first plate, then beat them lightly. In the second plate, mix the cornstarch, cornmeal, spices (pepper, 1 g paprika) and a pinch of salt. Dip one piece of fish at a time, first into the dry mixture, then into the egg mixture. Shake well and allow the excess to drain before coating the piece again in the dry mixture. Turn the pieces to coat them well on both sides.

STEP 7: Place the pieces on a rack in a roasting pan. Spray each piece of oil.

STEP 8: Place the roasting pan in the top of the oven and cook for 15 minutes.

STEP 9: Remove the fish and potatoes from the oven. Add salt to taste. Serve immediately with the tartar sauce next to it.
